Inspired by one of my NYC favorite restaurants, Cafe Gitane, we are pulling together a crowd-pleasing sandwich made with organic roasted chicken, (optional) slices of fresh Parmigiano-Reggiano or anchovies, chipotle mayonnaise, and roasted tomatoes. The spicy mayo gives the sandwich a strong but balanced kick, the fresh cheese and/ or anchovies lends some much-needed salt, and the roasted tomatoes helps soften the crunchy baguette as you enjoy each bite. Add a handful of lightly dressed arugula in a lemon vinaigrette for palate-cleansing break in between bites of the sandwich. Grab the above ingredient and let's get cooking.
