When it comes to fried rice, anything goes — leftover protein or the dribs and drabs from your produce drawers or freezer will do. I particularly love this Spring combo of greens and salmon for a lightened up version of the traditional combos. (Check out my Shrimp Fried Rice for another version!).
Make the rice ahead of time and this weeknight meal comes together in 30 minutes! Allowing the rice a day or two to dry out makes it doubly flavorful.
